This jerky is flavoured using Lemon Myrtle, an Australian Bush (Backhousia Citriodora) that has been used by indigenous Australians for millennia for its wide ranging health benefits, assisting problems from lung ailments to indigestion.  Luckily, it also tastes great too. As the name suggests it has a strong lemon flavour with a hint of the Aussie bush. We’ve used a traditional base of Honey and Soy Sauce, then layered the Lemon Myrtle over that and this flavour compliments the unique flavour of Kangaroo meat very nicely.
